Much like the fortune cookie, the origins of sushi are unknown. While there are theories as to how it started, there is no definite fact.
A famous theory was an old woman hiding pots of her rice in osprey nests, and how when she would go back to check on them, the rice had fish scraps that the birds had left behind. The rice somehow fermented the fish, and the combination was so good that sushi was created.
This idea of sushi most likely spread throughout Japan at the same time Buddhism spread because of the dietary restrictions the religion has. The sushi process started with nare-zushi, which then developed to funa-zushi when the fermentation time decreased, which led to mama nare-zushi.
Eventually sushi branched out to other countries and other ingredients, varying between fish, vegetables and many other things.
Who would've thought sushi was created by accident?
