It's interesting to think that the native cuisine of East Asia was was heavily influenced by European imperialism. As this very interesting article pointed out, a fair amount of the southeast Asian countries were colonies belonging to the French and the British, which had a big impact on the kind of food they ate, introducing things peasant cuisines.
Another important thing mentioned in this article was the development on the importance of rice. This crop specifically is what turned the natives from hunter-gatherers to farmers. What an impact one crop can have.
